On Thursday, January 29, we'll take on the big questions with leading experts and research from both theory and practice in our way of seeing the planet and ourselves.
Søren Ejlersen & Umahro Cadogan take you on a journey into the body and into the orbit of the planet. We dive into the fascinating world of bacteria and mycelia, in the soil, in the air, on and inside you. How does it affect us when we eat biodiverse or when we don't? And how does the way we grow and produce our food shape the microbial life around us - and within us?
Expect plenty of knowledge, anecdotes and energy as Umahro and Søren share insights from both the lab, the field and the kitchen.
We invite you to a green and vibrant meal where plants, bacteria and taste work together across climate and culture. Fermented plants meet colors, ginger, turmeric and all the flavors of the Middle East in a wonderfully spicy Danish raw material setting.

- Sourdough bread & nordic miso soup drizzled with kefir
- Tempeh on Nordic legumes
- Salad with cabbage, Jerusalem artichokes, apples & walnuts
- Fermented vegetables
- Cold potato salad with green herbs
